Pasta shape doesn't matter much to me but I don't care for "healthy pasta" made from wheat. Too hard to get it right and just doesn't taste the same.
I usually use tomato based meat sauce with plenty of basil, oregano, sweet peppers, garlic, onion and I like some fennel seed in the meat sauce.Basil and oregano I grow so usually have some fresh. I prefer real onion and garlic ( not powdered) and I add a little olive oil, salt, black pepper, and some red wine in the sauce as well as a little sugar.I use some wine to "de-glaze the pan and use it in the sauce itself. Mushrooms and occasional some chopped celeray in it.
Grandma was the first in her family born in the US. The rest born in the Peidmonte area of Italy. I just more or less use what grandma used to do. Lots of herbs and spices and flavor.
I also like cream and clam sauces, heavy on the garlic and basil.
